1) I was thinking of getting a 30 inch monitor for gaming. I have been told at the native resolution of 2560 x 1600 I would struggle to play decent games at full game spec even with 2 high end graphics cards in SLI. Would you agree?
2) Is it true that if I scaled the resolution down when playing games or even in general use the image quality would suffer? I was thinking of getting something like this DELL ULTRASHARP 3008WFP |

Not really, a single 4890 should suffice. It may not be 60fps solid on everything like a 1920x1200 monitor should do but it should be more than adequate. Worst case you can stick another one in there later. There should be another generation of video cards in the next month or so too so if you weren't happy with it and didn't want to bother with Crossfire that's an option too.
The bigger issue is really that most of those 30" monitors are just not made for gaming and have poor response times, etc. Read reviews first and make sure.
