But it only works in SLI/Crossfire coded games.

Of which there are, comparatively, very few.

It also means more cost outlay; for the second card, and the more powerful psu. Potentially also the motherboard, dependent on model.

Also, the highest performance boost I've ever seen personally was around 60%. Which ain't bad but must do better!
