| Those units do work, but are very expensive.
For this sort of setup I would reccomend against, and just using a couple of dual output graphics cards.
nVidia provide better support for this sort of thing IMO, what sort of budget have you got as far as cards are concerned?
Once you've got them, you can setup the positioning of your monitors, which one to use as primary, and how they're displayed,
As far as display goes, for what you're planning on doing you can probably cut it down to is either Dualview, whereby you can have a full screen application per monitor, or Extended, where your screen is stretched out to cover all monitors.
