What temperatures will they start to overheat in? and btw: im looking at 8800 series

In my experience they run about 10-15C hotter than CPUs, so grab a high-end estimate of a CPU overheat temp (probably around 70C) and add that. 8800s may be hotter, not sure if you're talking G92, nor single-slot GT or dual-slot GTS.

Yeh. Depending entirely on the GPU clock speed, the average heat from a 500MHz GPU In-Game is around 70-80C.

That's a higher temperature than any gpu I've seen, when running at peak.

Ambients come into it, case airflow comes into it, fan size/cfm comes into it, other component temps come into it. Even how you've cable tidied can come into it.

That's a bit of a broad statement to make Klunk, what are you basing it on?
