I am thinking of the following mobo/CPU combos:
    1) Z77 LGA 1155 with Core i7-2600K CPU

    or

    2) X79 LGA 2011 with Core i7-3820 CPU
The LGA 2011 combo will cost me about $50 more then the LGA 1155 solution.

I will be doing some gaming, photoshop and video creation.

My question is which will be faster?

faster is relative. The one thing I do know is that x79 has quad channel memory handling instead of dual channel like the 1155. If your going to use it for something that needs better RAM like high end gaming, virtualization, or CAD then you should probably choose the x79 chipset with the right processor.

    No.

LGA2011 is a workstation socket, LGA1155 is an enthusiast socket.

Bang for buck your far better off with an 1155 rig for gaming, though I'd choose a 3770 (cheaper than 2600K) or even better a 3770K (only £10 more) - it'll outperform the 2600K for gaming.

This applies of course only depending on your balance of gaming to video/photoshop. I assume because you listed it first that your gaming is more intensive than your video production.

If you do some voodoo video stuff that fries any low-core-count CPUs, then you'll benefit from four channels of DDR3, and should get the 2011 socket.
