Yeah, you'll see higher latencies in DDR3, for example, than DDR2, or 1066 vs 800, but due to a number of technical things the latency generally doesn't matter.

You do, though, owe it to yourself to change the latencies to the correct/rated ones if the BIOS doesn't recognize them correctly.
