Can you make a triple channel set by say buying 3 of the same stick of RAM, but not as a set?
Because I know it can be done with DDR2, but a 3 x 2GB set of DDR3 is so much more expensive than (price of 1 2GB DDR3 stick) x 3 So I thought maybe it can't be done? Also just a general RAM question, the lower the CAS Latency the better right? Thanks, Ollie.

You can but it may or may not work, the sets are there because they're matched up by the manufacturer to be all of one "batch".
And yeah, though it doesn't affect stuff that much.

Yeah I just figured, like if you bought 3 sets of 2 x 2GB all at once from the same vendor, odds are it'll be the same batch anyway, surely?
Plus some of it would be matched anyway
