If I have a JPG file on my desktop and I double click it the following happens and all within a couple of seconds
Photo editor opens, as it's the associated program for JPG's
The file is sent to the printer
Photo editor closes

Any ideas why it does this ?

If I open a GIF, phote editor opens, but remains open and doesn't send the file to the printer

Any help would be appreciated as it's driving me mad

Right click the jpg on the desktop and select properties, click the general tab and see "Opens with"

Make sure the photo editor you use is selected, if not then you can change it.
