In hotmail you have a bit called Bcc and i think if you write the e-mail address in there you recipients will not know who else got that e-mail. Outlook maybe have the same feature.

In outlook 2003 the limit on how many addresses you include as CC (or To or Bcc) is set at the smtp server, you could ask your ISP or email provider what their limit is. If it's on a Bcc list then the recipient hasn't a clue about the extent of the other copies.

Are they in a form which makes them suitable to produce by way of a mailing list rather than directly from an email program? Outlook 2003 tends to be used more for personal correspondence.

the emails are for the company I work for and it's a couple thousands emails that have to sent out. I know there are softwares where can be used for the mass emailing but working in the IT dept. I don't like the idea of using another software just for mass emailing.

If it's a one-off exercise you might be right. If they want to do it monthly then it's a mailing list.
